Method

Grape harvest is carried out prior to the traditional collection period, selecting the best, sparse bunches, which are placed in crates in order to wither for a considerable amount of time. Pressing is done manually and the very slow fermentation takes place partly on the destemmed marc, then continues for 18 months in a barrel. From the extremely low yield of must (10/12%) emerges an extremely complex wine full of aromatic sensations recalling tropical fruits, blonde tobacco and nuts. The sweet, seductive flavor is enriched by a pleasant salty streak.
