The wine’s history
Classic “Pas dosé” method. Early harvest and preparation of the sparkling wine, using a technique which entails the separating of the cap of accumulated grape marcs, then fermentation at a controlled temperature.
Draft with addition of selected yeasts and re-fermentation.
Immersion of the bottles enclosed in metal cages onto the sea-bed at a depth of 60 meters (at a constant temperature of 15°), for a period of 14 months.
The bottles are then resurfaced and re-positioned head downwards, and after a total of 22 months, are subjected to disgorgement and re-filling using the same wine, with no additional sugar content.
Significant straw-yellow colour, very fine and persistent perlage, intense and complex aroma, ample bouquet with clear hints of saline character, sincere and lasting dry flavor, intriguing and rich in minerality.
Vines
Bianchetta Genovese, Vermentino and Cimixia in variable proportions, depending on the harvest of that year.
Serving Suggestions
Ideal for aperitifs, can accompany the whole meal with a preference for seafood and general fish-based dishes.
