Spumante "Abissi Rosè"

The wine’s history

Classic “Mas Dosè” method. Early harvest and immediate pressing with a pneumatic grape press, using drained must, with a maximum yield of 45/50%, subsequent decantation, racking and fermentation at a controlled temperature.

Draft with addition of selected yeasts and re-fermentation.

Immersion of the bottles enclosed in metal cages onto the sea-bed at a depth of 60 meters (at a constant temperature of 15°), for a period of 26 months.

The bottles are then resurfaced and re-positioned head downwards, and after a total of 26 months, are subjected to disgorgement and re-filling using the same wine, with no additional sugar content.

Pale but lively pink color, embracing aroma, complex and elegant; significant flavor, dry and sincere. The perception is that of a vegetal character, with hints of Mediterranean berries, enriched by saline and mineral notes.

Vines

Ciliegiolo and Granaccia in variable proportions, depending on the harvest of that year.
